Homemade Whole Wheat “Rhodes” Rolls

Since having baby number 3, I’ve been searching for ways to get more out of my cooking time. I am dabbling a little in freezer meals, cooking in bulk, and preparing foods that will give me multiple meals. I figure if I’m going to get the kitchen dirty, I may as well get more out of it. I still have a lot to learn, but this last week I had a little success that I thought I would share with you all.

A few months ago we posted our FAVORITE bread recipe. I use this recipe for bread, pizza dough, cinnamon rolls, and so much more. Well, I was making bread and some odd shaped pizzas last week and had a random amount of dough left. It wasn’t big enough for a full loaf, but I didn’t need it for anything else. I thought to myself, I wonder if these could freeze as rolls and then I use them later… just like rhodes rolls. If you follow us on Facebook, you saw this experiment unfold.

Like I said, it was just an experiment, so I will share what I did… but if any of you have any other tips, feel free to share.

Instructions:

  1. Make bread recipe (the full recipe makes 6 loaves and is way too big for a kitchen aid, make sure you read our bread making tips post too)
  2. Do with the recipe what you would like – make bread, pizza, or use it all for rolls
  3. Once the dough is kneaded, form into small balls – remember they will raise after you take them out of the freezer
  4. Place on a sheet of wax paper, on a pan in the freezer seperated
  5. Let them freeze for a few hours, so they are hard on the edges, and then put them in freezer bag – this is to stop them from clumping
  6. When ready to cook, remove from freezer and place and greased pan
  7. Cover with plastic wrap sprayed with oil, and let rise for 2-3 hours
  8. Bake at 350 for 15-20 minutes, or until golden brown
